Parade College has taken out the 2019 Culinary Competition. Parade edged out St Bernard’s College and Whitefriars College to claim their second consecutive title.
All schools that were represented cooked up a storm, producing high quality dishes that impressed the judges.
The event was held at Holmesglen Institute, who have been hugely supportive of this event since its inception in 2015. They are wonderful hosts, generously providing the staff and facilities, and adding an air of professionalism to the competition. All of the participants enjoyed the opportunity to work as part of a team and gained some valuable experience and feedback in the process.
2019 Champions – Parade College
Chicken Roulade wrapped in prosciutto with a pistachio farce served with a celeriac puree, smoked sweet potato rosettes ,roasted king brown mushroom and a rich chicken reduction.
2nd Place – St Bernard’s College

Butter Chicken served with Naan bread, Raita, steamed Basmati rice and Tomato and Red Onion salad with a Balsamic Glaze.

Stracciatella egg soup in chicken broth, chicken breast scaloppine in white wine sauce served with green beans, herbs and provolone cheese stuffed chicken thighs served with roast potatoes, drums in cacciatore sauce.
